- 1 1/2 cups flour
- 1/4 cup brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Flax gel (mix 1 tablespoon flax seed meal with 2 tablespoons warm water and let sit for a few minutes)
- Lemon zest and juice from 1 1/2 lemons - puréed, slice remaining as garnish
- 1 teaspoon apple cider vinegar
- 1 teaspoon pure vanilla extract
- 5 tablespoon vegetable oil
- 1 cup water
- Combined dry ingredients.
- Add wet ingredients and mix well.
- Pour into 9 x 9 Square or circular pan.
- Bake at 350° for 35 minutes.
