Ingredients
- 1 cup flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- Pinch of salt
- 3/4 cup carrots, shredded or puréed
- 1/2 cup brown sugar
- 2 tablespoons flax meal plus 1/3 cup water + 2 tablespoons water
- 1/3 cup vegetable oil
- 1/4 cup raisins
Instructions
- Combine carrots and dry ingredients in large bowl.
- Shred carrots in food processor and place on top of dry ingredients.
- Process flax, and sugar, and oil until smooth. Add to dry ingredients and mix until just blended. Fill cake pop maker and bake for about 7-8 minutes.
